I am a cake obsessive, based in West Sussex, UK.

I started off making cakes for family and friends before giving up a proper career in favour of playing with sugar full time. Having worked for two bakeries making their wedding and celebration cakes, I am now looking toward world domination with breaks for coffee and chat.

Jack Skellington Halloween cake - Oct 15

A spooky Jack Skellington cake for a Halloween birthday.

A 2 layer chocolate fudge cake. Yummy!  I used orange coloured vanilla buttercream between the layers, obviously.

Once I'd done the usual buttercream covering as a crumb coat (see earlier posts), I covered it in black fondant.

Using a paper template as a guide, so I knew where things were going, I started building up the contours a bit with white fondant.

The shiny bits are trex to stick the fondant together with something that will disappear over time.

He was looking eerily like a black and white mistral at this point which was making me feel a bit weird...

I covered the whole thing with white fondant, cut out the eyes and slits for the mouth and stitching, exposing the black underneath, pressed the fondant over the contours, shaped with various modelling tools and dusted with black and green petal dust.

I airbrushed the fondant covered cake drum, put the cake on and continued to airbrush the base of the cake so it blended in with the board.  I added black and white striped ribbon to the sides of the cake drum.

I deliberately dirtied up the white a bit with blossom tint and airbrushing; after all, he is a Tim Burton character, it wouldn't go for him to look too perfect and pristine.

Harvest Flowers Wedding cake - October 2015

White feathers wedding cake - October 2015

Wedding Fair time!
My first foray into wafer paper, but it was easier than expected and I quite like the effect.

My original design involved neater looking, more deco feathers, but as I steamed them I found that I much preferred them with a looser effect (more natural), so I just kept going with that.

Black Briar Cake - October 2015

Wedding Fair time!
The first wedding fair up was The Quirky Boutique wedding Fair in Brighton and Kelly at Belle Events was keen on an old red and black gothic wedding cake of mine so I decided to give a black wedding cake I’d had in mind a go.
It might not be everyone’s idea of romance, but if we were all alike the world would be a very boring place! ;)

Sunshine girl birthday cake - September 2015

Our amazing, talented and very treasured girl has another birthday.

The design was inspired by a wedding cake design that she came up with herself a few weeks back.

Start them young... the lure of cake doesn't hurt of course. She says when she's big she plans to work in the bakery with me so she can draw and eat cake mix all day.  (She's not worked out how much washing up is involved yet!)

I added to the words she had on her version, words about who she is.

The brief for this cake was "girly, maybe with some nail varnish, but definitely with lots of coloured cake inside like the Hungry Catapiller cake you did".

As you can see from the off cuts below, coloured cake...check! 😉

Beautiful sunshine, I can't believe how grown up you are.
We love you darling girl.
Always be you, you are awesome!!!
xxxx

P.S.  The cake didn't last long once the kids saw the rainbow layers inside!

Wedding Fair Season has arrived.. or is it Fayre...?

Count me as confused about the spellings but, whether it's "fair" or "fayre", the Kasserina design studio is all aflutter about up and coming wedding fairs/fayres/shows.

I can now confirm that you can catch me at the Quirky Boutique Wedding Fair, Brighton Centre, Kings Road, BN1 2GR on Sunday 4th October.  It's a great fair, centring on couples who are looking for a wedding that reflects them and their lives, so no paint by numbers wedding goods here.

Go to http://www.bellesevents.co.uk/quirky-boutique-wedding-fair-in-brighton/ for more details.

You can also find me the following week at a brand new fair at Barnham Hall, West Sussex, PO22 0AY on Sunday 11th October.

It's all go finishing off the new designs, can't wait to start showing them off.  Hope to see some of you there, do say hi.

Pastels and superheroes wedding cake - August 2015

Wedding cake for him and her, pastels and superheroes.

4 tiers: coffee and caramel, raspberry (cake and frosting flavoured using actual raspberries, not synthetic flavourings) chocolate fudge and lemon cake in superhero colours with fresh lemon curd frosting.

Decorated with sugar flowers, sugar shirt, sugar baterang and sugar spiderman.

I was quite pleased with my flowers, especially the mixture of different roses and the mini morning glory style creepers.

The flower theme came from photos supplied by the bride.

The superhero themed pieces were inspired by other cakes, except for the baterang which was direct from the groom himself.

The baterang was cantilevered using florist's wire and straws, as well as stuck on with royal icing.

The bottom tier was in comic book colours to reflect the theme.

NB. the photo shows the cake straight out of the oven, baked with a cover so the open texture on the top was removed when levelled.

Yummy lemon off cuts show the colours well:

Straining raspberries:

Lemon curd cooling:

Raspberry test cake:

Fresh raspberries between layers:

and ALOT of good dark chocolate!

As you can see, I like the effect of having some tiers with rounded corners and some with 90˚corners.  I don't do it all the time, but I think it adds interest so you'll often see this on my cakes as well as having the double board effect.

Super wedding, fabulous venue, really lovely couple and a very happy life together.

Congratulations both! x
